I made these burgers last week and they turned out great. They’re flakier and not as tough as a regular burger, but that can be expected when working with a fish like salmon.
1 pound salmon fillet, skinned*
1/4 c. red onion, finely chopped
2 tbsp. fresh parsley
1 clove garlic, minced
1 tsp. thyme
1/4 tsp. sea salt
1 egg white
2 tbsp. extra virgin olive oil, divided
Heat one tablespoon of olive oil over medium heat in skillet. Add garlic and onion. Saute for three to four minutes. Remove from heat. Chop salmon into small 1/4 pieces and add to medium-size bowl. Mix in parsley, thyme, garlic, onion and salt. Finally, mix in egg white. Divide into four patties. Place on a plate, cover and refrigerate for 30 minutes.
Heat remaining tablespoon of olive oil over medium heat in skillet. Cook salmon burgers for about 3 minutes on each side. Burgers should be cooked thoroughly.
Serve on a whole grain bun, or on its own with a mixed green salad. Enjoy!
