Maybe this won't get categorized as "healthy", but these Skinny White Wine Peach Pops took about 5 minutes to make, a couple hours to freeze - and will be greatly enjoyed later today.
1/2 peach, coarsely chopped
3/4 c. water
1/2 c. white wine (I like using Chardonnary. Sweeter wines, like Riesling or even a Pinot Grigio makes the pops overkill sweet)
1 packet stevia, or 1 tbsp honey
Combine 1/4 c of the chopped peach with water and sweetener. Blend thoroughly. Add wine and stir.
Drop remaining pieces of chopped peach into the bottom of pops molds. Don't press them into the bottom, rather let them sit loosely. Pour in liquid mixture. Freeze for 2 to 3 hours. Enjoy!
NOTE: Alcohol doesn't freeze well, so the ratio of alcohol to any other liquid added needs to remain low. Still, it's a nice treat!
